The careful choice of grapes, pure Sangiovese, their vinification with appropriate techniques and their continuous control during the long ageing in oak barrels with a maximum capacity of Hl. 55, allow the exceptional qualities of this wine to be appreciated. Good preparation is recommended for proper oxygenation before drinking.
Molino di Sant'Antimo
Molino di Sant'Antimo consists of about 40 hectares of land with a south/south-west exposure, sloping from 250 to 200 metres above sea level down to the Orcia river. The soils have a composition of schist, galestro and crushed stone, rich in mineral salts. The vine plantations have developed gradually over the years. The vinification area contains modern steel vats for 1,000 Ql. The ageing area houses the large French Allier oak barrels and the French and American oak casks.

A wine of an intense ruby colour, almost garnet, the nose presents itself with fine notes of ripe, almost cooked fruit, such as plums, sour cherries, blueberries and blackberries. Intense bouquet of spices, black pepper, incense, leather and nutmeg that envelop the palate thanks to a mature, soft and full-bodied tannin.
Campo all'Albero IGT La Sala:
An important wine, 50% Merlot and 50% Cabernet Sauvignon with international roots but a chianti soul. Vinification takes place after hand picking by sub-zones of the vineyard. Maceration for at least three weeks at a controlled temperature below 30°C Maturation in the cellar for 24 months in fine-grained, low-toasted French barriques of first and second passage, followed by 12 months in the bottle.

Marruca honey differs from common honeys in that it is a monofloral honey produced from the nectar of the Marruca plant, its aroma is intense and distinctive, with floral and spicy notes, its flavour is rich and also complex, presenting sweet notes that combine with a slightly bitter aftertaste, its consistency is viscous but can become grainy over time. This honey has beneficial properties such as antibacterial and antioxidant effects.
Miele di Zipe
Il Miele di Zipe, is the name of the honey produced at the Azienda Agricola Nicola Zipeto. Founded in 2019, Il Miele di Zipe soon established itself as a producer of excellence for a natural product such as honey. Intense ruby red with violet hues. The nose is surprising for its intensity, with a bouquet of ripe red berries, violets and elderberries. In the mouth it is enveloping and fresh, harmoniously bringing back to the palate all those typical Sangiovese scents appreciated on the nose. Intense and easy to drink at the same time. The finish is soft and pleasant thanks to mature and delicate tannins, without any sharpness.
Chianti Classico DOCG La Sala:
Chianti Classico La Sala had a strong base of Sangiovese (95%) and a small note of merlot (5%) Destemming and soft crushing. Short maceration, maximum one week, in steel tanks at controlled temperatures not exceeding 25°C. Refinement in the cellar takes place over 15 months, dividing the mass: 50 % in 38 Hl French oak casks, 50 % in small temperature-controlled steel tanks. Finally, it rests in the bottle for at least 6 months

Chianti Classico Gran Selezione La Sala is a wine that is perfect in combination with red game meat. 100% Sangiovese selected and harvested by hand from a single vineyard of 1.5 hectares. Vinification begins with the use of indigenous yeasts for fermentation, which lasts about two weeks. Maceration for three weeks at controlled temperatures not exceeding 25°C. After that a long aging of 36 months in a single 38hl un-toasted French oak barrel. Bottle aging Minimum 6 months.

Mascagni Farm has inherited from past generations of farmers who cultivated 600 old olive trees of the indigenous Frantoio, Moraiolo, and Leccino varieties in the Val d’Orcia. An olive grove made in the old way from which derives an extra virgin olive oil that expresses to the maximum the scents and flavors of Pienza’s territory. Even in such a traditional olive-growing, Mascagni Farm try to use as much technology as possible in the field of natural bio-stimulants and organic fertilizers to keep the old olive trees strong and healthy.

Tenuta San Carlo
When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. To improve the quality and fertility of the soil, they use techniques such as plant cover and crop rotation. Only two types of rice are produced: Carnaroli Rice and Ribe.

Are obtained by carefully selecting top-quality cuts, including shoulder meat.
Once the meat has been selected, it is seasoned with salt and pepper and then minced with a small grain.
The meats are then stuffed into natural gut with a diameter of about 2/3 cm, tied by hand and left to mature.
The appetising and tasty but at the same time simple flavour tends to enhance the flavour of the top-quality raw material.

The history of Le Selle di Vallolmo:
The Selve di Vallolmo forests are located in Casentino, a valley surrounded by centuries-old Apennine forests. In this area, still little known to tourists, it has been possible to maintain and preserve the ancient crafts related to agriculture, livestock breeding and cooking, rich in local products. Today, Le Selve di Vallolmo carry on their activity in a sustainable manner and contribute to keeping the traditions of Casentino alive. The company also breeds and processes the famous Grigio del Casentino, a pig native to the area, from which the delicious Prosciutto del Casentino, a Slow Food presidium, is made.

E' ottenuta selezionando con cura i tagli di prima qualità fra cui la carne di spalla.
Una volta scelte le carni, vengono condite con sale di Cervia, pepe, e poi macinate con granatura media.
Viene aggiunto anche il finocchio in semi e in fiore.
Le carni vengono poi insaccate in budello naturale di diametro pari a circa 10/12 cm e messi a stagionare.

Macelleria Fabbrini
In 1948, Mario Fabbrini founded the 'Macelleria Fabbrini' in San Giovanni Valdarno, a small town in the province of Arezzo. In addition to his wife Rina, over time his sons, Carlo and Andrea, joined the business and now run the family butcher's shop, considered one of the oldest in the Valdarno Aretino. Even today, you can still smell the fragrances and aromas of the past as the butchering and processing of meat is done just as it was in the past.

An impenetrable ruby-red mantle, the elegant and powerful bouquet highlights blackberry and cassis against a background of humus and fern; it then hints at balsamic resins, coffee and cinnamon. It has a remarkable structure with dense tannins. The alcoholic component is properly integrated in the progression thanks to the contribution of a generous sapidity. The finish is persistent and elegant.
Wine from Val di Cornia
Okenio is the commander of the Terradonnà winery, the highest expression of the territory of Suvereto and the Val di Cornia in a pure cabernet sauvignon (100%). They have been producing this wine since 2002 and it has made them known in the world of enology. The high quality obtained with great tenacity and every year is the greatest challenge. Produced with manual selection of the best grapes in the vineyard, slow maceration in vitrified cement vats for 24 days, malolactic fermentation in French oak barriques where it remains for 14 months. Maturation in bottle for 30 months.

Terradonnà is located in Suvereto, in the Val di Cornia, a perfect area for wine production. A perfect area for wine production thanks to a soil particularly rich in minerals and a microclimate that, thanks to the recirculation of air from the sea (just a few kilometers away), maintains a mild climate all year round. A blend of Merlot (50%) and Cabernet Sauvignon (50%) of Val di Cornia where international grape varieties have their highest expression. The result is a full-bodied but elegant wine, complex for its tertiary aromas that derive from the characteristics of the soil rich in clay and minerals.
