Pigeon roe is processed by hand from the extremely cured pigeon ham. The name is reminiscent of the traditional fish botargo because, by grating the ham, particular curls are obtained.
It has a pungent odour but gives the palate a fine and elegant flavour, persistent and pleasant. Strong flavours and savouriness reminiscent of the flavours and scents of the woods where pigeons are reared in total freedom in Pisa. It is a special experience that cannot be found elsewhere.

Straw yellow in colour, limpid and brilliant, with light greenish reflections. A wine with a strong character, the nose is intense, broad and expresses fruity notes: white-fleshed fruit, citrus fruits and light mineral tones. On the palate it is firm and balanced, with a marked minerality and tending to savoury. It possesses great freshness and convincing drinkability.
Bianco di Pitigliano DOC Vinification:
Before being pressed, the grapes are placed overnight in cold storage in order to have a greater extraction of aromas and to avoid oxidation. Soft pressing is then carried out. The grapes are then decanted for 36-48 hours. Fermentation takes place in white, without skin contact, in stainless steel at a controlled temperature of 16°C. Vegan wine. All energy used during the production process comes from renewable sources.
Tenuta Montauto
At the Tenuta Montauto they are definitely lucky. There is nothing around them: only the silence as far as the eye can see of the thick Maremma woods, the wind, the hares and the hawks. There are no factories, no towns, no neighbours, no roads except the provincial road to Campigliola. An isolation that allows them to make uncompromising choices, in total freedom and with an absoluteness that comes from being released from the world. Besides isolation, they also have the good fortune of the providential sea air that always blows in from the west. The Selve di Vallolmo forests are located in Casentino, a valley surrounded by centuries-old Apennine forests. In this area, still little known to tourists, it has been possible to maintain and preserve the ancient crafts related to agriculture, livestock breeding and cooking, rich in local products. Today, Le Selve di Vallolmo carry on their activity in a sustainable manner and contribute to keeping the traditions of Casentino alive. The company also breeds and processes the famous Grigio del Casentino, a pig native to the area, from which the delicious Prosciutto del Casentino, a Slow Food presidium, is made.
