Le Fontacce
The farm " Le fontacce" was born in 2008, on a farm existing since the beginning of 1800, is certified organic on all its products. Le Fontacce is a producer of the famous Fagiolo Zolfino Slow Food which is so called for its pale yellow color like sulfur, has a round shape and its pasta is creamy and exceptionally tasty. Traditionally it is sown on the hundredth day of the year, also called by farmers “day of the hundred”. It is very connected to climatic conditions and often produces a very small harvest, so much that its cultivation was almost abandoned, in preference to beans having a more reliable yield.

Macelleria Fabbrini
In 1948, Mario Fabbrini founded the 'Macelleria Fabbrini' in San Giovanni Valdarno, a small town in the province of Arezzo. In addition to his wife Rina, over time his sons, Carlo and Andrea, joined the business and now run the family butcher's shop, considered one of the oldest in the Valdarno Aretino. Even today, you can still smell the fragrances and aromas of the past as the butchering and processing of meat is done just as it was in the past.

Shows a beautiful and brilliant golden yellow color with amber reflections. The nose is intense, ample but delicate. Has fruity nuances of ripe yellow fruit, floral hints of broom, aromatic and officinal herbs. On the palate, sapidity and freshness burst pleasantly and closing it is exalted by a light, sapid and mineral aftertaste
The wine is the result of a long maceration with the skins. Fermentation and maceration take place in seven hectoliter terracotta amphorae for at least two months, the yeasts are indigenous. Throughout the vinification process, the wine remains in terracotta amphorae.

The name Commendatore honours the memory of my great-grandfather Michele Giusti, who was awarded the Order of Merit of the Italian Republic on 27 December 1974. Commendatore is made from Syrah grapes and aged in barriques.

The history of Le Selle di Vallolmo:
The Selve di Vallolmo forests are located in Casentino, a valley surrounded by centuries-old Apennine forests. In this area, still little known to tourists, it has been possible to maintain and preserve the ancient crafts related to agriculture, livestock breeding and cooking, rich in local products. Today, Le Selve di Vallolmo carry on their activity in a sustainable manner and contribute to keeping the traditions of Casentino alive. The company also breeds and processes the famous Grigio del Casentino, a pig native to the area, from which the delicious Prosciutto del Casentino, a Slow Food presidium, is made.
