Brilliant colour with an onion veil hue. It has an intense, delicate, complex bouquet; floral, citrus and fresh fruit notes are perceived. The taste is full, enveloping, balanced and persistent.
Obtained from the early harvesting of Sangiovese grapes that are macerated on the skins for 18/24 hours at a controlled temperature. After an initial settling, fermentation begins on the skins for about 15 days at 16/18° C in stainless steel tanks. The wine is bottled after a short ageing period and stored properly at a controlled temperature.

A winning intuition that in just a few years has led this company to become the most important in the region, with the Acetoscana brand. Sangiovese grapes are harvested in the Chianti hills. Vinification and fermentation, which are essential to obtain a quality vinegar, are constantly controlled and managed in a natural way. The key part of the process is a slow acetic fermentation at a constant temperature that requires long periods of time and continuous controls, carried out using a superficial static method, reminiscent of the ancient Orleans method.
