Pecorino Toscano DOP Seasoned 12 months Caseificio Manciano, Tasting notes:
Pecorino Toscano Stagionato DOP is a product which, due to the effect of the passage of time, manages to express to the full all the typical fragrances and aromas of their classic matured Pecorino Toscano DOP. Pecorino Toscano DOP Stagionato can be defined as such after a minimum of four months of maturing. With the minimum guaranteed maturation of twelve months, however, Caseificio Manciano has chosen to give a more precise connotation to a product which, precisely because of the passage of time, manages to express to the full all the fragrances and aromas typical of their Pecorino Toscano DOP Stagionato Classico
Caseificio Manciano

Castellare di Castellina
The producer, the very famous and renowned company Castellare di Castellina is in fact one of the most historic, working to defend these centuries-old traditions. Castellare di Castellina was born from the union of four farms. Those were the 70’s when the so-called Renaissance of the Italian wine had begun. A Renaissance to which Castellare was able to give its own contribution, keeping together tradition and innovation.
Chianti Classico DOCG Riserva Castellare di Castellina, Tasting notes:
Characterized by fruity notes of currant and cherry emerge sensations of tobacco and spices deriving from the careful refinement in wood. Very compact, with notes of vanilla and chocolate, with sweet and soft tannins and a persistent acidity typical of the Sangiovese variety| good is the persistence on the palate and the complexity of the aftertaste.
Sangiovese from Chianti
Chianti Classico DOCG Riserva typical ruby red colour, which has a tendency to become garnet red as the wine ages. The nose has an intense aroma of violets and an elegance that is enhanced over time. On the palate the wine displays relatively dry and harmonious notes, while also being slightly tannic, with a flavour that becomes increasingly velvety over time.

Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.
Chianti Classico DOCG Riserva Il Poggiale Castellare di Castellina, Tasting notes:
Vibrant and lively ruby colour. The nose displays typical violet flowers and cherry fruit scents and a mineral note. Opens immediately to the palate with freshness and flavour dominating the middle part of the tasting, while the pleasant finish offers fragrant fruity notes.
Chianti Classico DOCG Riserva Il Poggiale reserve obtained from a single vineyard and which received the highest scores for its elegance and typical characteristics. A wine that showcases the enormous potential of the Sangioveto grape.

Le Ginestre IGT Castellare di Castellina, Tasting notes:
Straw yellow color. The nose has delicious aromas of yellow peach and elderberry. You can perceive notes of grape and a finally a touch of vanilla. The palate enters round and shows a balanced structure.
Tangible proof that Tuscany is also a land of white wines, even if for the most part produced using international varieties. A pleasant wine to drink, in which the depth of a Chardonnay and the aroma typical of a Sauvignon Blanc come together in a delicate and equally full-flavoured blend.

Vernaccia di San Gimignano
White wine from San gimignano, the Vernaccia grape is the most important DOCG of a Tuscan white wine.
A great white wine, from a single vineyard where the characteristics of the local grape par excellence, Vernaccia, emerge clearly and distinctly. Although pleasant when young, it often surprises for its ability to age, evolving notes, both olfactory and tasting, complex and mineral. It is not by chance that it is one of the very few white wines produced also in the reserved type. This Vernaccia di San Gimignano wine enhances many gastronomic combinations. Find its natural place in the Mediterranean cuisine in which extra virgin olive oil dominates. Excellent with pasta dishes with white sauces, rice salads, and pasta salads. Surprising is with the ribollita and all its variants that are found in Tuscany. Extraordinary with fish dishes prepared in any way: baked, fried, grilled or baked, as well as raw fish. Magnificent with various fries and eggs. Amazing with white meat prepared with sauces, and without. Excellent with vegetables of all seasons, and their preparations. Exquisite with fresh and medium-aged cheeses, which enhances the flavor.

For years they have been enjoying themselves and experimenting in their workshop in Quarrata, in the province of Pistoia. There are now five flavors, made up of imagination and years of experience. Each one has a main ingredient as a protagonist, for a balanced recipe full of flavour, where every bite manages to encompass all the facets of taste that only a naturally processed ingredient can tell.

Frateria San Benedetto
The Frateria San benedetto stands in the Sienese countryside linking Montepulciano to Chianciano Terme; it has ancient origins, it was used by the Romans as a ‘rest-home’ during long journeys. Today it has been completely restructured and has undergone innovations that have ensured a good development of the farm itself; in addition to having its own agriturismo, the farm is mainly involved in the organic cultivation of fruit trees, in particular the local wild plum, known as ‘la Coscia Di Monaca’ throughout Tuscany and beyond. Their fruit is also used to make traditional jams without the addition of sugar or additives, guaranteeing a healthy and tasty product to take straight to your table.Unlike the consortium, the certaldo onion has very ancient origins, it was in fact already mentioned by Boccaccio in the famous Decameron for its taste and extraordinary characteristics.
The producers’ consortium acts as guarantor and guardian for the preservation and continuation of this excellence, also acting as custodian of the onion seeds (in the two varieties Vernina and Statina) and are also registered with the region as such.

Gramineta
The history of Gramineta goes back about two centuries. The ancestors of the family that founded the company, in order to escape from malaria, a disease that was very present in the coastal area in the 1800s, were forced to sell their possessions and land in the Castiglione della Pescaia area to buy land in the Roccastrada area to cultivate olive trees and vines. They have always preferred the choice of a healthy and genuine agriculture far from large-scale production and the use of substances that encourage production at the expense of the quality of the final product. Today, they are producers of many high quality products, especially extra virgin olive oil, thanks to the suitable soil that enhances the native cultivars.
