special and dynamic vinification, whole cluster fermentation and partial or total prolonged carbonic maceration, fermentation and ageing in different materials such as cement, steel and terracotta.

Save The Grape:

The winery was created through the redevelopment of a beautiful 30-year-old vineyard in Maremma that gave birth to Fihaia Rosso 2021 and 2022. The project was born to create a wine community made according to traditional and simple methods, aimed at freshness and that is great for both ready drinking and bottle aging.
The wines of this reality are united thanks to each other and distinguished by innovative winemaking, whole cluster fermentations and prolonged carbonic macerations, early harvests and lower ph, these methods are implemented mainly to reduce the impact of climate change that increasingly leads to over-ripening of grapes
