Scovaventi
Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.
The company creates many varieties of products in its territory, pickles, jams, honeys and many others; the quality of these products comes from tradition and love for the land and its fruits.

A good balance of flavours, with a slight predominance of acidity, and aromas of yoghurt, whey, fresh grass and subtle floral notes, with a medium-to-low finish.

Rosso Manciano is a soft, firm cheese whose distinctive feature is that its rind is treated with a mixture of double-concentrated tomato paste and olive oil.
Rosso Manciano is a soft, firm cheese, aged for a minimum of 20 days, as stipulated by the Pecorino Toscano PDO production regulations, but it is at its best when enjoyed after 40–60 days of ageing. Treated on the rind with a double concentrate of tomato and olive oil, this cheese retains the flavour of fresh milk with notes of butter and a slight tang, characteristic of young pecorino cheeses.

When the cheese is cut, one can appreciate the aroma of fresh milk with hints of dried fodder. On tasting, it reveals a dominant acidity and unrefined lactic aromas, with traces of herbs and animal notes.
The rind is oily and wrinkled. It has an intense straw-yellow colour. Inside, the cheese has a lovely, bright ivory colour and a fine, regular texture.
Cutting into it reveals aromas of fresh milk with hints of dried fodder. The taste is dominated by acidity and unevolved lactic aromas, with traces of aromatic herbs and animal notes.

This cheese has a pleasantly savoury flavour that is perfectly balanced. As you chew it, you can detect hints of milk and meat stock. It has a long-lasting finish with intriguing spicy notes.
The rind is a straw-yellow amber colour. The interior reveals a milky cream colour. Beneath this apparent shell lies a laboratory of flavours in full swing. Upon cutting, the nose is met with fragrant notes and aromas of mature, structured lactic notes, with hints of melted butter

The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

Produzione Artigianale:
La bottarga di muggine si ottiene dalle uova del cefalo. Una volta essiccata e stagionata, ha un colore dorato o ambrato e un sapore sapido e salato con un accenno di mandorla. La bottarga era conosciuta un tempo come il "caviale dei poveri", ma questo non rende giustizia a questa delizia mediterranea, apprezzata dai buongustai fin dai tempi degli antichi imperi egizio, fenicio e romano fino ai giorni nostri.
I Pescatori di Orbetello
I Pescatori di Orbetello sono riusciti a integrare la pesca e l'agricoltura, la vendita di prodotti freschi e la preparazione di prodotti trasformati, il turismo e la ristorazione. Tutto il pesce proviene esclusivamente dalla laguna di Orbetello, dove una attenta gestione integrata tra pesca e ambiente garantisce la freschezza del prodotto. Antiche tecniche di pesca, frutto di secoli di esperienza e condizioni climatiche, a volte non possono garantire la disponibilità immediata del prodotto, che verrà comunque consegnato. Le uve Avvoltore vengono raccolte da vigneti piantati sulla collina "Poggio dell’Avvoltore". Il suo terreno argilloso-calcareo produce un tannino forte e potente, percepito quando si assapora il vino. La prima annata è stata nel 1988, il blend ha subito da allora pochissime modifiche. Negli ultimi anni è sempre stato caratterizzato da queste uve: Sangiovese, Cabernet Sauvignon, Syrah.

Duecento anni fa, la famiglia Moris raggiunse la Maremma toscana, un luogo di meraviglia e vino: il sogno si avverò! Un amore sincero per una terra vergine. Deep dark ink with touches of red velvet on the rim. On the nose is complex with notes fruits like blackcurrant, red cherry and blueberries with touches of black pepper, cedar that evolves on black olive and underbrush. On the palate has a Balance entrance with a silky mouthfeel lifted by a great acidity lingering on dark fruit like cassis evolving on a dense structure with chocolate, tobacco box and black cherry.
Monteverro’s flagship. A true Premier Grand Cru of Maremma, made from the classic Bordeaux grape varieties Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot and yet with the unmistakable character of the Tuscan coast. The grapes are exclusively from prime locations on Monteverro slopes which flow gently to the sea, the wine is aged for about 24 months in barriques from the best coopers and then for two years in the bottle.

The Monteverro estate is located at the foot of the medieval village of Capalbio, in the southernmost part of Tuscany, the Maremma. A genuine passion for wine dictates that no compromises are made in the manual processing and selection of grapes during the harvest, to finally bring each grape variety, each terroir and each vintage to its maximum expression, with precision and by adopting innovative winemaking techniques.

Colore oro pallido. Il naso è vivace con un'esplosione di pesca a polpa bianca, pera, biscotto al limone e erbe di montagna con un finale di cedro e miele d'acacia. Al palato, tuttavia, attacca fresco ed esuberante su note croccanti di mango, pompelmo e un finale di prugna.

"Un vino con una sublime capacità di riflettere la luce del sole della Maremma. Note fresche e croccanti si intersecano in una pura luce di miele, biscotti al limone, uve bionde perfette, profumi di montagna." Nonostante la piccola produzione (circa 5000 bottiglie all'anno), Monteverro considera il suo chardonnay come uno dei vini più importanti della cantina.

Poetry, warmth and scents of our mountain, a reminder of when the grandparents, around the fire, gratified themselves with something special aged cereal brandy, it involves the smell with hints of yeast, honey vanilla, carob and still chestnut and candied citrus. It brings back the scents of the farmyard during the wheat harvest.

È stata scelta una barrique in rovere francese tostata a media intensità per l'invecchiamento di 5 anni di questo prezioso spirito.
Questa scelta è stata dettata dalla necessità di esaltare le note intensamente fruttate presenti nel giovane distillato.
