L'azienda di Renzo Marinai prende il nome dalla vicina antica chiesa di San Martino. Lo stesso Renzo Marinai ha preso in gestione l'azienda nel 1996 e, con il supporto dell'enologo Giovanni Cappelli, ha completamente riorganizzato le sue operazioni, trasformandola in una fattoria interamente biologica. L'azienda si estende per circa 33 ettari; poco più di otto sono piantati a vigneto. Il terreno è ondulato, che si alza e si abbassa tra i 350 e i 500 metri sul livello del mare. Il suolo è argilloso, perfetto per il Sangiovese, che consente un buon drenaggio e lo sviluppo di radici profonde.

Castello di Monsanto
Ci sono due luoghi al Castello di Monsanto che catturano ogni visitatore per il fascino e la magia che si percepiscono: la collina del Poggio e la storica cantina. Trasmettere almeno un decimo delle emozioni che si provano visitando la cantina di Monsanto è molto difficile. Gli aromi, gli echi, i silenzi, gli strati di nobili muffe rendono questo luogo unico, che merita almeno una visita. L'azienda ha origine da qui. Così, da una salita sul Poggio e da una discesa nella cantina, è nata per la prima volta l'idea di realizzare un Cru nel Chianti Classico. Era il 1962 quando furono prodotte le prime 6.000 bottiglie del Chianti Classico Riserva Il Poggio. Dei 72 ettari piantati a vigneto, tra i 260 e i 310 metri s.l.m., 56 ha sono in Sangiovese, il vitigno in cui l'azienda ha creduto profondamente fin dall'inizio. I cloni di Sangiovese presenti nei vigneti provengono da una selezione massale di viti trovate nel vigneto Il Poggio, "la madre" di tutti i vigneti di Monsanto. In una piccola percentuale sono poi presenti i due vitigni storici del Chianti Classico: Canaiolo e Colorino.

Nobile di Montepulciano
Vino Nobile di Montepulciano Cantine Dei is one of the most prestigious Italian wines, the first to be awarded the DOCG and it is the perfect example of the expression that Sangiovese takes in the Montepulciano lands. It is mostly Sangiovese, with small quantities of complementary varieties (5%). Grows in a predominantly clayey soil with the presence of sand (tuff), which gives it an intense colour, a full body and the ability to age. The vinification technique consists of soft pressing, fermentation in stainless steel at a controlled temperature of 26-28°C and maceration on the skins for 15-20 days with pumping over. Finally, it is aged for a minimum of 24 months, of which at least 18 months in 50 hl Slavonian oak casks.
Nobile di Montepulciano DOCG Riserva Bossona Cantine Dei, Tasting notes:
Complex, elegant and balanced structure. Ruby-coloured tending to garnet, with intense and elegant aromas, with hints of violets, underbrush and spices, it has a character of finesse, with firm, velvety tannins and a long, deep finish.
Vino Nobile Riserva Bossona is one of the highest expressions of the Montepulciano DOCG. Its grapes come from the vineyard of the same name, one of the most suitable, planted by Caterina’s grandfather, Alibrando, in 1961. The wine became a Riserva in 1999, with long ageing in wood and in the bottle. Without a doubt it is one of the estate’s flagship wines, a symbol of the elegance and grace of Sangiovese in Montepulciano. The yields are very low (about 40 quintals per hectare) and the wine is bottled with the label Bossona Riserva only in the best vintages. The soil is of Pliocene origin, dating back 2.5-5 million years. It is rich in tuff, skeleton and fossils, which are not only strongly draining, but also give the wine structure and minerality. The Bossona vineyard is one of the sunniest areas of Montepulciano and its favourable exposure allows for excellent ripening of the grapes. The complex composition of the soil is perfect for Sangiovese, and the constant ventilation ensures that the grapes are healthy.

The aim is to practise organic farming, creating a microcosm that is sustainable both ecologically and economically and socially. From the very beginning, in fact, local and ancient varieties are cultivated, excluding the use of fertilisers, chemical and synthetic pesticides, toscanello bean and zolfino bean, and cereals such as Verna, Gentil Rosso, Frassineto and Cappelli durum wheat, are naturally adapted to the local soil and climate, Furthermore, it allows the farm to adopt a three-year rotation system and prevent over-exploitation of the land, thus ensuring respect for the balance of the land
La Casa Rossa Val Del Melo, Tasting notes:
Intense ruby red colour, a Sangiovese of character and elegance. Bouquet of red fruit notes in perfect harmony with light hints of vanilla and tobacco. The taste is fine and complex, with elegant tannins giving a fresh and balanced flavour
On arrival at the winery, the grapes are destemmed and left almost intact. Alcoholic fermentation takes place in steel tanks at a temperature of 27 °C and maceration lasts about 25 to 30 days, followed by malolactic fermentation. It matures in 10hl French oak barrels for about 24 months, after which the wine is blended and bottled.
Val Del Melo
The Val Del Melo winery is located near the town of Castiglione della Pescaia, its proximity to the sea combined with its location at the bottom of the valley means that Pian di Rocca is characterised by a particularly temperate microclimate, 2-3 degrees higher than the local average. It is no coincidence that for years the area was the production site for the first fruits and vegetables of the Maremma. The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel. The products are rich in omega 3 and protein, and the processing and preservation contribute to maintaining the flavour without altering it.

Tenuta San Carlo
When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. To improve the quality and fertility of the soil, they use techniques such as plant cover and crop rotation. Only two types of rice are produced: Carnaroli Rice and Ribe.

Olio Abbraccio
Olio Abbraccio was born in Seggiano, on the slopes of Monte Amiata, a small medieval village of about 1,000 people, but surrounded by centuries-old olive trees. Seggiano also gives its name to the cultivar, the Olivastra Seggianese, a plant that withstands the low temperatures of Monte Amiata's winters. The antioxidant properties of Abbraccio mean that this oil can be used daily both for cooking and especially for raw seasoning to benefit from all its nutritional properties.

Conserveria Tonnina
The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel. The products are rich in omega 3 and protein, and the processing and preservation contribute to maintaining the flavour without altering it.
