Caseificio Il Fiorino
The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

Pastificio Caponi è un'azienda storica di pasta a Montepulciano, in Toscana. Fondata nel 1953 da Nonna Angelina, l'azienda è ora gestita dalla terza generazione della famiglia Caponi, che continua a produrre pasta artigianale di altissima qualità utilizzando solo grano italiano di prima scelta e acqua di sorgente.

Baggiolo produces juices, compotes and fruit-based sauces at an altitude of 1400 metres. Living above 1000m altitude means a change of perspective. Respect for nature, passion for the land, the quest for a healthy life and natural food are feelings that are stronger, more tenacious in the mountains. In Abetone, the woods and snow-capped peaks tell of great ski champions, but in the high-altitude heaths, the undisputed protagonist of the stories is the wild bilberry, which has always been harvested here in large quantities. Thus began the story of Baggiolo, at 1400 metres above sea level, with Leandro and Marilena who, in the 1980s, opened a small workshop to process the fruits of the undergrowth. Production of the first jams and juices began, following recipes handed down from generation to generation. Only the best raw materials have always been chosen, processed by skilful hands that know how to give the right spreadability to the jams, making them easy to spread on bread.

Il nome GR1 5652 è legato alla targa del trattore Pasqualino, che apparteneva al nostro bisnonno e che usiamo ancora per lavorare nella vigna.

IL PINGRO è un giovane business gestito da Chiara e Margherita: due cugine determinate a dare nuova vita ai vecchi vigneti di famiglia. A solo 1 km dal mare, nella provincia di Grosseto, le nostre viti crescono su terreni sabbiosi e minerali, scossi dalle raffiche del Mistral: ecco perché il nostro vino sa di mare. Prodotto da quattro mani lungo la costa della Maremma toscana, GR1 5652 è realizzato con uve autoctone Ansonica e Procanico. Il risultato finale riflette noi e la nostra terra. La nostra filosofia si basa su un'agricoltura sana e rispettosa: ogni fase del processo è eseguita a mano. Ciò che offriamo è un vino semplice, ma fatto con cura. Ispirato al gusto del vino contadino. IL PINGRO deriva da 'il Pingrosso', il nome del luogo in cui ci troviamo. In mezzo al campo c'è un grande pino marittimo che il nostro bisnonno piantò per trovare un po' di ombra nelle calde giornate estive. Questo pino, che crebbe solitario, divenne un 'grande pino' in larghezza, da cui il nome Pingrosso. Accorciato in Pingro, per semplicità. Oggi quel pino è diventato il nostro simbolo, impossibile non notarlo.

Questo vino ha un colore rosa tenue e un sapore fresco e coinvolgente. Il naso è un complesso mix di frutti rossi, violette e rose.

PietraNova si trova in Toscana, nella zona del Bolgheri D.O.C., uno dei territori più prestigiosi per la produzione importante di vini di altissima qualità, riconosciuti dai consumatori italiani e stranieri. Il territorio è protetto dai venti invernali da una catena di colline che corre parallela alla costa, mentre in estate è investito da venti rinfrescanti che si generano a ovest, dal Mar Tirreno.
Oggi, è provato che è proprio questa vicinanza al mare a favorire la produzione di grandi vini, a Bolgheri come a Bordeaux, una città con la quale Bolgheri è gemellata proprio per queste meravigliose caratteristiche che condividono.

Renzo Marinai
L'azienda di Renzo Marinai prende il nome dalla vicina antica chiesa di San Martino. Lo stesso Renzo Marinai ha preso in gestione l'azienda nel 1996 e, con il supporto dell'enologo Giovanni Cappelli, ha completamente riorganizzato le sue operazioni, trasformandola in una fattoria interamente biologica. L'azienda si estende per circa 33 ettari; poco più di otto sono piantati a vigneto. Il terreno è ondulato, che si alza e si abbassa tra i 350 e i 500 metri sul livello del mare. Il suolo è argilloso, perfetto per il Sangiovese, che consente un buon drenaggio e lo sviluppo di radici profonde.

That of Poggio Nibbiale is a special story, which begins far away, in Germany... The Buchheim family had always dreamed of having a vineyard in Tuscany. Their wish came true when the Poggio Nibbiale winery was founded in 1998. Their dream of cultivating wine in the beautiful scenery of southern Tuscany became reality. The grapes for this unique wine, made from 100% Sangiovese, are exclusively grown on a special hill slope on Poggio Nibbiale. They are handpicked and post-selected prior to vinification. Tommaso Poggio Nibbiale is perfect to match Matured cheese and Red meats. With this wine, Poggio Nibbiale intends to develop the full potential of the indigenous Sangiovese grapes. Consequently, the pure terroir of Poggio Nibbiale – characterized by the close Tyrrhenian sea – emerges most prominently within the Tommaso. The wine ages for 24 months in oak wood barrels of the first and second passage. With barren elegance, balanced acidity, and soft tannins it presents the character and uniqueness of this classic Italian grape variety.

The Olivodoro farm was established in 1972, in Suvereto. It selects and multiplies fruit and vegetable varieties suitable for artisanal processing and transformation into jams and marmalades, processing the freshly harvested fruit using vacuum technology, thus preserving the fruit and vegetables from oxidation and concentrating the fructose contained in the fruit itself, thus preserving the genuineness, integrity, flavour and unmistakable freshness of the fruit. Olivodoro products are therefore free of preservatives, pectin, gelatin and antioxidants.

Olio Abbraccio
Olio Abbraccio was born in Seggiano, on the slopes of Monte Amiata, a small medieval village of about 1,000 people, but surrounded by centuries-old olive trees. Seggiano also gives its name to the cultivar, the Olivastra Seggianese, a plant that withstands the low temperatures of Monte Amiata's winters. The antioxidant properties of Abbraccio mean that this oil can be used daily both for cooking and especially for raw seasoning to benefit from all its nutritional properties.

Fermentazione e macerazione con le bucce per più di 30 giorni in vasche di cemento da 10 ettolitri utilizzando lieviti indigeni naturalmente presenti in cantina, fermentazione malolattica in barriques immediatamente dopo il travaso, maturazione in barriques per 18 mesi, affinamento per 6 mesi in bottiglia.
Le Capanne
Il produttore di vino Gabriele Mazzeschi ha otto ettari di vigneti coltivati con Sangiovese, Syrah, Trebbiano e Malvasia, con una piccola quantità di Cabernet Sauvignon e Canaiolo. Oltre a produrre vini eccellenti, la cantina Le Capanne di Gabriele Mazzeschi coltiva anche circa 6000 ulivi. Le condizioni sono ottimali, terreno ghiaioso nelle colline toscane a un'altitudine di 350-450 metri sul livello del mare. I 6000 ulivi, delle classiche cultivar toscane Frantoio, Moraiolo e Leccino, sono disposti a terrazze sul terreno ghiaioso a un'altitudine di 350-450 metri sul livello del mare.

Tenuta Gardini è un legame di amore e passione che la loro famiglia ha avuto con questo territorio, attraverso i secoli e le generazioni. The olive harvest begins in November where it is harvested by hand and the pressing of the olives is carried out cold and on the same day in the company’s oil mill.
Chianti Classico DOCG La Sala, Note di degustazione:
Rosso rubino intenso con riflessi violacei. Il naso è sorprendente per la sua intensità, con un bouquet di frutti rossi maturi, violette e sambuco. In bocca è avvolgente e fresco, riportando armoniosamente al palato tutti quei profumi tipici del Sangiovese apprezzati al naso. Intenso e facile da bere allo stesso tempo. Il finale è morbido e piacevole grazie a tannini maturi e delicati, senza alcuna durezza.
Chianti Classico DOCG La Sala:
Il Chianti Classico La Sala ha una forte base di Sangiovese (95%) e una piccola nota di merlot (5%). Diraspatura e soffice pigiatura. Macerazione breve, massimo una settimana, in serbatoi d'acciaio a temperature controllate che non superano i 25°C. L'affinamento in cantina avviene per 15 mesi, dividendo la massa: 50% in botti di rovere francese da 38 Hl, 50% in piccoli serbatoi d'acciaio a temperatura controllata. Infine, riposa in bottiglia per almeno 6 mesi.

La Sala del Torriano ha antiche tradizioni, risalenti al 1200, ed è situata a San Casciano Val di Pesa, proprio nel cuore del Chianti Classico. Così è nato il progetto della nuova cantina, basato sul desiderio di produrre vini biologici di altissima qualità, realizzati con cura e dedizione nel massimo rispetto per l'ambiente.
Spato IGT Terradonnà, Tasting notes:
Ruby red, on the nose emerge scents of blackberry, raspberry, candied cherry and berry jam, violet, sweet spices, cinnamon, cloves. Strong impact on the palate with soft and well-integrated tannins, excellent persistence.
In Tuscany, the most famous native grape variety in the world is Sangiovese (100%). On the coast, this grape variety adds to its typical aromas the influence of the proximity of the sea that arrives with its breeze to the hills of Suvereto, making the winter season less harsh.

Terradonnà is located in Suvereto, in the Val di Cornia, a perfect area for wine production. A perfect area for wine production thanks to a soil particularly rich in minerals and a microclimate that, thanks to the recirculation of air from the sea (just a few kilometers away), maintains a mild climate all year round. The philosophy of the company stems from respect for the environment and the rhythms of nature. Firm in their desire to maintain the traditional cellar with cement tanks and wooden presses, they do not renounce innovation in winemaking techniques and research into methods of working to improve the life of the plants. Tradition and innovation coexist in Terradonnà.

Fruity, floral, broad and clean, soft on the palate, harmonious balance between freshness and intensity. Long fruity aftertaste
Vinruspo comes from a blend of sangiovese 75% cabernet 20% canaiolo nero 5%. It is excellent as an introductory wine, accompanied by first courses in general and also with white meats.

Villa Di Capezzana, Tasting notes:
Elegant, with notes of black cherry and raspberry well blended with the ripe fruit. In the mouth it is soft, enveloping, with soft tannins and good body. The acidity is present, but well balanced by the tannic richness. Long finish, with a sweet liquorice aftertaste.
A very small and perhaps little-known DOC, but with wines of great quality. On the outskirts of Florence, wine has always been produced at Tenuta Capezzana.

Rosa Cantine Dei, Tasting notes:
Is characterised by a soft pink colour, its aroma is rich in fresh aromas, especially flowers and fruit, red and soft. Moderate acidity, fresh fruit aromas such as cherry, strawberry, raspberry and orange blossom.
the Rosa Cantine Dei IGT comes from the “Martiena” vineyard, which is located in front of the winery and whose grapes are therefore the first to reach the reception area during the harvest. The grapes destined for Rosa are harvested a couple of weeks earlier than those for Rosso di Montepulciano: when the veraison is complete and the acidity level is still high with good sugar content. The soil, rich in sand and tuff, enhances the wine’s fruity taste, its pleasantness and freshness. After a soft pressing, the must is placed in a refrigerated tank at 6-8°C for 24-36 hours. Fermentation takes place in stainless steel at a controlled temperature of 14°C for 7-10 days.
Cantine Dei
Cantine Dei is known as one of the best wine producers of Montepulciano. Every year their wines are awarded and recognized by critics as excellent.
At the Dei estate, arts merges with wine. Their cellar is the perfect example of how architecture and winemaking are working together for a stunning result.
Their wine are all based on the local Sangiovese production and their Nobile wine are among the best of the region.
