Un vino di un profondo colore rubino, al naso presenta una consistenza densa e intensa di profumi floreali e speziati, scorza di bergamotto, pepe nero, cuoio, molta frutta rossa e nera e un finale avvolgente con note balsamiche di menta ed eucalipto. Il palato offre la stessa complessità aromatica, arricchita da una piacevole mineralità e tannini densi, morbidi e maturi.

Questo vino ottiene una macerazione di tre settimane a una temperatura controllata di circa 30°C. Utilizzo di tecniche di rimontaggio per ottenere un'estrazione completa della ricchezza polifenolica delle uve. Maturazione in cantina per almeno 18 mesi, 50% in botti di rovere francese da 38 hl e 50% in barriques francesi di terzo e quarto passaggio. Infine, affinamento in bottiglia per 6 mesi.

I tannini sono generalmente maturi e morbidi in bocca, ma con la grande acidità e mineralità che distinguono il Sangiovese coltivato su suolo Galestro.
Castello di Monsanto
Ci sono due luoghi al Castello di Monsanto che catturano ogni visitatore per il fascino e la magia che si percepiscono: la collina del Poggio e la storica cantina. Trasmettere almeno un decimo delle emozioni che si provano visitando la cantina di Monsanto è molto difficile. Gli aromi, gli echi, i silenzi, gli strati di nobili muffe rendono questo un luogo unico che merita almeno una visita. L'azienda ha origine da qui. Così, da una salita sul Poggio e da una discesa nella cantina, è nata per la prima volta l'idea di realizzare un Cru nel Chianti Classico. Era il 1962 quando furono prodotte le prime 6.000 bottiglie del Chianti Classico Riserva Il Poggio. Dei 72 ettari piantati a vigneto, tra i 260 e i 310 metri s.l.m., 56 ha sono in Sangiovese, il vitigno in cui l'azienda ha creduto profondamente fin dall'inizio. I cloni di Sangiovese presenti nei vigneti provengono da una selezione massale di viti trovate nel vigneto Il Poggio, "la madre" di tutti i vigneti di Monsanto. In una piccola percentuale sono poi presenti i due vitigni storici del Chianti Classico: Canaiolo e Colorino.
Farina di Castagne del Monte Amiata:
"I più piccoli, accuratamente selezionati a mano, marroni vengono macinati in un antico mulino di pietra e trasformati in una farina di colore tipicamente avorio con un aroma inconfondibile."
Naturalmente senza glutine, ottenuto da castagne italiane, si presta a numerose preparazioni dolci e salate.

It shows a straw yellow color and nuances of gold. To the nose almond, yellow flowers of the field, vanilla are the most present notes. To the palate it is intense, harmonic with delicate tannins. Elegant, ethereal and balanced, with a complex and persistent aftertaste.
Trebbiano is the novelty and the bet of the company; produced for the first time in 2000 with the aim of relaunching the Trebbiano grape in Tuscany. From a mass selection, a short pruning, a severe green harvest, and a late harvest, Capezzana obtains a very rich must, which ferments and ages in tonneaux, acquires elegant perfumes, and lends itself to long aging. Cantina La Cura
The Cantina La Cura, owned by Enrico Corsi, is a young and dynamic production company consisting of fifteen hectares of vineyards in the heart of the denomination Maremma Toscana Doc and Monteregio di Massa Marittima, located in the high Maremma Toscana on the Tyrrhenian coast. The main varieties hosted are Sangiovese, Cabernet Sauvignon, Merlot, and Aleatico for a total annual production of 30 thousand bottles. The company favors an ecological approach to the processing of soil and vines, coordinated by the University of Pisa, which is also its main technical partner. The first bottles of wine date back to 1999.

A cheese with a fairly soft texture.
A good balance of flavours, with a slight predominance of acidity, and aromas of yoghurt, whey, fresh grass and subtle floral notes, with a medium-to-low finish.
he cheese has a fairly soft texture and a lovely ivory colour. The holes are irregular in shape and fine in size.
The aroma is dominated by fresh lactic notes and hints of fresh fodder, whilst the flavour reveals a good balance of tastes with a slight predominance of acidity, featuring aromas of yoghurt, whey, fresh grass and subtle floral notes with a medium-low persistence.

Rosso Manciano is a soft, firm cheese whose distinctive feature is that its rind is treated with a mixture of double-concentrated tomato paste and olive oil.
Rosso Manciano is a soft, firm cheese, aged for a minimum of 20 days, as stipulated by the Pecorino Toscano PDO production regulations, but it is at its best when enjoyed after 40–60 days of ageing. Treated on the rind with a double concentrate of tomato and olive oil, this cheese retains the flavour of fresh milk with notes of butter and a slight tang, characteristic of young pecorino cheeses.

When the cheese is cut, one can appreciate the aroma of fresh milk with hints of dried fodder. On tasting, it reveals a dominant acidity and unrefined lactic aromas, with traces of herbs and animal notes.
The rind is oily and wrinkled. It has an intense straw-yellow colour. Inside, the cheese has a lovely, bright ivory colour and a fine, regular texture.
Cutting into it reveals aromas of fresh milk with hints of dried fodder. The taste is dominated by acidity and unevolved lactic aromas, with traces of aromatic herbs and animal notes.

Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.
The company creates many varieties of products in its territory, pickles, jams, honeys and many others; the quality of these products comes from tradition and love for the land and its fruits.

BIXI Terradonnà, Note di degustazione:
Si presenta con un magnifico colore viola, i tipici aromi delle vigne della Maremma accompagnano il primo assaggio, al palato il vino si presenta con un sapore fruttato di mora e mirtillo, seguito da note floreali e concludendo con un sapore di pepe nero speziato ma delicato.
Bixbi
Il vino creato da uve Syrah e Sangiovese si esprime come un prodotto fresco e giovane, che colpisce per il perfetto equilibrio tra un profumo speziato e un gusto delicato ed elegante. Una caratteristica speciale di questo vino è la temperatura alla quale può essere gustato, infatti a 13/14° si esprime al meglio, rendendolo particolarmente piacevole come aperitivo o in abbinamento a zuppe di pesce.
Terradonna
Terradonnà si trova a Suvereto, nella Val di Cornia, un'area perfetta per la produzione di vino. Un'area perfetta per la produzione di vino grazie a un suolo particolarmente ricco di minerali e a un microclima che, grazie alla ricircolazione dell'aria dal mare (a pochi chilometri di distanza), mantiene un clima mite tutto l'anno. La filosofia dell'azienda nasce dal rispetto per l'ambiente e i ritmi della natura. Fermi nella loro volontà di mantenere la cantina tradizionale con serbatoi in cemento e presse in legno, non rinunciano all'innovazione nelle tecniche di vinificazione e alla ricerca di metodi di lavoro per migliorare la vita delle piante. San Polo
San Polo is situated on the south-eastern slope of Montalcino hill, at an altitude of 450 metres, the 22 hectares of the estate, 16 of which are planted with Sangiovese, are characterized by a dry, breezy microclimate, with wide diurnal and seasonal temperature swings. In the cellar, an admirable example of bio-architecture, designed to minimize energy consumption and environmental impact, the grapes are processed with artisan care to enhance the finesse of the Sangiovese aromas. The essence of San Polo, in fact, is to take the wines back to the vineyard that generated them, so as to express the concept of terroir to the full. Man’s intervention is nothing more than bringing the wine closer to nature, adopting a viticulture that respects the soil, the microclimate and the biodiversity of the place, so that the biological cycle of the vineyard and the pedoclimatic context are in perfect harmony.

Trasparente, limpido e cristallino. Chiaro il profumo di fresco vinacce in questa giovane grappa. Bilanciato e piacevole al palato, con buona persistenza, mette in evidenza note fruttate e erbacee di fieno tagliato nel retrogusto.

La lenta maturazione in botti di rovere francese, utilizzate solo una volta per l'invecchiamento del vino, porta a questo bellissimo distillato di un brillante colore dorato.
