Oatmeal soup Podere Pereto, How to use:
This soup can be cooked without soaking. It consists only of cereals and can be combined with legumes to form a complete single dish.

IL PINGRO è una giovane azienda gestita da Chiara e Margherita: due cugine determinate a dare nuova vita ai vecchi vigneti di famiglia. A solo 1 km dal mare, nella provincia di Grosseto, le nostre viti crescono su terreni sabbiosi e minerali, scossi dalle raffiche del Mistral: ecco perché il nostro vino sa di mare. Prodotto da quattro mani lungo la costa della Maremma toscana, GR1 5652 è realizzato con uve autoctone Ansonica e Procanico. Il risultato finale riflette noi e la nostra terra. La nostra filosofia si basa su un'agricoltura sana e rispettosa: ogni fase del processo è eseguita a mano. Ciò che offriamo è un vino semplice, ma fatto con cura. Ispirato al gusto del vino contadino. IL PINGRO deriva da 'il Pingrosso', il nome del luogo in cui ci troviamo. In mezzo al campo c'è un grande pino marittimo che il nostro bisnonno piantò per trovare un po' di ombra nelle calde giornate estive. Questo pino, cresciuto solitario, è diventato un 'grande pino' in larghezza, da cui il nome Pingrosso. Accorciato in Pingro, per semplicità. Oggi quel pino è diventato il nostro simbolo, impossibile non notarlo.
Baba in jar Retrogusto
Preparato da artigiani, seguendo meticolosamente le tradizioni. Il lungo processo di impastamento rende l'impasto morbido, poi viene inzuppato con un rum giamaicano di alta qualità e cotto in un barattolo di vetro utilizzando la tecnica del vuoto, che conferisce al baba una durata di conservazione di 6 mesi senza l'aggiunta di conservanti, anche senza refrigerazione.

Olio Abbraccio
Olio Abbraccio was born in Seggiano, on the slopes of Monte Amiata, a small medieval village of about 1,000 people, but surrounded by centuries-old olive trees. Seggiano also gives its name to the cultivar, the Olivastra Seggianese, a plant that withstands the low temperatures of Monte Amiata's winters. The antioxidant properties of Abbraccio mean that this oil can be used daily both for cooking and especially for raw seasoning to benefit from all its nutritional properties.

Questo vino ha un colore giallo paglierino e un bouquet floreale con distinti sentori di ginestra e acacia, il gusto è intenso e strutturato, con un'ottima sapidità e freschezza.

Macerazione a freddo pre-fermentativa sulle bucce per 12 ore. Poi fermentazione a temperatura controllata.

Gli antenati della famiglia che ha fondato l'azienda, per sfuggire alla malaria, una malattia molto presente nella zona costiera nel 1800, furono costretti a vendere i loro beni e terreni nella zona di Castiglione della Pescaia per acquistare terreni nella zona di Roccastrada per coltivare ulivi e viti. Hanno sempre preferito la scelta di un'agricoltura sana e genuina lontana dalla produzione su larga scala e dall'uso di sostanze che favoriscono la produzione a scapito della qualità del prodotto finale. Oggi, sono produttori di molti prodotti di alta qualità, in particolare olio extravergine di oliva, grazie al terreno adatto che valorizza le cultivar autoctone.

Di colore rosso rubino, il bouquet è intenso con note fruttate di frutti rossi e ciliegia, accompagnato da accenni di liquirizia, vaniglia ed erbe aromatiche, il gusto è morbido e fresco con un accenno fruttato.

Pigiatura e vinificazione in serbatoi d'acciaio a temperatura controllata (26-28 °C). Macerazione sulle vinacce di fermentazione per 20-22 giorni.

Bontout, Note di degustazione:
Ha un colore giallo fine ed elegante. Il bouquet è elegante e bilanciato con aromi di agrumi e crosta di pane, il gusto è cremoso e grazie alle bollicine molto fini è delicato e avvolgente.
BontoutVinificazione:
Il vino spumante Bontout è prodotto utilizzando il metodo Martinotti. La base del vino spumante viene raccolta precocemente e, dopo la fermentazione, rimane in acciaio per l'invecchiamento. La spumantizzazione in autoclave è seguita da un periodo di circa 2 mesi di maturazione sui lieviti.

Val di Cornia DOC Okenio Terradonnà, Tasting notes:
An impenetrable ruby-red mantle, the elegant and powerful bouquet highlights blackberry and cassis against a background of humus and fern; it then hints at balsamic resins, coffee and cinnamon. It has a remarkable structure with dense tannins. The alcoholic component is properly integrated in the progression thanks to the contribution of a generous sapidity. The finish is persistent and elegant.
Okenio is the commander of the Terradonnà winery, the highest expression of the territory of Suvereto and the Val di Cornia in a pure cabernet sauvignon (100%). They have been producing this wine since 2002 and it has made them known in the world of enology. The high quality obtained with great tenacity and every year is the greatest challenge. Produced with manual selection of the best grapes in the vineyard, slow maceration in vitrified cement vats for 24 days, malolactic fermentation in French oak barriques where it remains for 14 months. Maturation in bottle for 30 months.

Terradonnà is located in Suvereto, in the Val di Cornia, a perfect area for wine production. A perfect area for wine production thanks to a soil particularly rich in minerals and a microclimate that, thanks to the recirculation of air from the sea (just a few kilometers away), maintains a mild climate all year round. The philosophy of the company stems from respect for the environment and the rhythms of nature. Firm in their desire to maintain the traditional cellar with cement tanks and wooden presses, they do not renounce innovation in winemaking techniques and research into methods of working to improve the life of the plants. Tradition and innovation coexist in Terradonnà.
Prasio IGT Terradonnà, Tasting notes:
Intense ruby red colour, on the nose aromas of myrtle and eucalyptus emerge together with blueberry and blackcurrant berries, dark chocolate and a hint of leather and spices. In the mouth it is warm and soft, with good structure, velvety tannins and a long finish.
A blend of Merlot (50%) and Cabernet Sauvignon (50%) of Val di Cornia where international grape varieties have their highest expression. The result is a full-bodied but elegant wine, complex for its tertiary aromas that derive from the characteristics of the soil rich in clay and minerals.

Primo is a Rosato 100% Sangiovese, is perfect as an aperitif or pair it with salmon, cream, and potato dishes.
Le Capanne
Winemaker Gabriele Mazzeschi has eight hectares of vineyards cultivated with Sangiovese, Syrah, Trebbiano and Malvasia, with a small amount of Cabernet Sauvignon and Canaiolo. In addition to producing excellent wines, Gabriele Mazzeschi's Le Capanne winery also grows around 6000 olive trees. The conditions are optimal, gravelly soil in the Tuscan hills at an altitude of 350-450 metres above sea level.
