When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Cocciuto perché questo vino è il risultato della loro testardaggine nel combinare passione e innovazione del passato e del futuro. L'Ansonica dei nostri vigneti, bruciata dal sole e colpita dai venti, vinificata in amphora con lunga macerazione sulle bucce – circa 6 mesi – durante i quali la terracotta consente una costante micro-ossigenazione, preservando gli aromi più autentici.

Fontuccia ha dedicato tutto alla vita dell'isola e la loro passione è infinita, quella che oggi la viticoltura chiama “eroica”. Una conoscenza arcaica che hanno scelto di proteggere, valorizzando le specificità e la bellezza del loro territorio con questo vino. Sono uno dei pochissimi viticoltori sull'isola del Giglio. Viticoltura eroica perché i loro vigneti sono piccole terrazze su rocce granitiche affacciate sul mare. La vendemmia avviene a mano, come 80 anni fa, perché anche l'uso dei trattori è impossibile.

fermentato in acciaio inox a temperatura controllata per 30 giorni, la fermentazione malolattica e la maturazione avvengono in tonneaux da 300lt di rovere francese Allier, maturazione da media a lunga, tostatura media, per 12/14 mesi. L'affinamento in bottiglia dura da 4 a 6 mesi.

Un vino con un bouquet ricco e armonioso, presenta note fruttate di bacche rosse avvolte da accenni di tabacco e cioccolato, il gusto è fine con un finale morbido e persistente.
Val Del Melo
La cantina Val Del Melo si trova vicino al comune di Castiglione della Pescaia, la sua vicinanza al mare combinata con la sua posizione in fondo alla valle significa che Pian di Rocca è caratterizzata da un microclima particolarmente temperato, 2-3 gradi più alto della media locale. Non è un caso che per anni l'area sia stata il sito di produzione dei primi frutti e ortaggi della Maremma. Dal 2019, l'azienda utilizza agricoltura biologica certificata, che garantisce prodotti genuini di ottima qualità.
C'era e Non C'era, Vinificazione:
Le uve vengono diraspate e lasciate quasi intere. La fermentazione avviene a una temperatura controllata di 27 gradi e la macerazione dura circa 25/30 giorni, seguita dalla fermentazione malolattica. L'invecchiamento avviene in botti di rovere francese da 10hl per circa 12 mesi, dopodiché il vino viene assemblato e imbottigliato.

Il consorzio della Cipolla di Certaldo ha una storia molto recente, infatti, è stato fondato nel 2013, da appena 5 aziende agricole, per proteggere la famosa e deliziosa cipolla di Certaldo.
A differenza del consorzio, la cipolla di Certaldo ha origini molto antiche, infatti era già menzionata da Boccaccio nel famoso Decameron per il suo sapore e le sue straordinarie caratteristiche.
Il consorzio dei produttori funge da garante e custode per la preservazione e la continuazione di questa eccellenza, fungendo anche da custode dei semi di cipolla (nelle due varietà Vernina e Statina) ed è registrato presso la regione come tale.

The consortium of the Cipolla di Certaldo has a very recent history, in fact, it was founded in 2013, by just 5 farms, to protect the very famous and delicious onion of Certaldo.
Unlike the consortium, the certaldo onion has very ancient origins, it was in fact already mentioned by Boccaccio in the famous Decameron for its taste and extraordinary characteristics.
The producers’ consortium acts as guarantor and guardian for the preservation and continuation of this excellence, also acting as custodian of the onion seeds (in the two varieties Vernina and Statina) and are also registered with the region as such.

Mostra un bellissimo e brillante colore giallo dorato con riflessi ambrati. Il naso è intenso, ampio ma delicato. Ha sfumature fruttate di frutta gialla matura, accenni floreali di ginestra, erbe aromatiche e officinali. Al palato, la sapidità e la freschezza esplodono piacevolmente e il finale è esaltato da un retrogusto leggero, sapido e minerale.
Anfora Vermentino IGT Gabriele Mazzeschi
Il vino è il risultato di una lunga macerazione con le bucce. La fermentazione e la macerazione avvengono in anfore di terracotta da sette ettolitri per almeno due mesi, i lieviti sono indigeni. Durante tutto il processo di vinificazione, il vino rimane in anfore di terracotta.
Le Capanne
Il produttore di vino Gabriele Mazzeschi ha otto ettari di vigneti coltivati con Sangiovese, Syrah, Trebbiano e Malvasia, con una piccola quantità di Cabernet Sauvignon e Canaiolo. Oltre a produrre vini eccellenti, la cantina Le Capanne di Gabriele Mazzeschi coltiva anche circa 6000 ulivi. Le condizioni sono ottimali, terreno ghiaioso nelle colline toscane a un'altitudine di 350-450 metri sul livello del mare. I 6000 ulivi, delle classiche cultivar toscane Frantoio, Moraiolo e Leccino, sono disposti a terrazze sul terreno ghiaioso a un'altitudine di 350-450 metri sul livello del mare.

La famiglia Bertoli coltiva il terreno collinare di Santa Luce sin dalla Seconda Guerra Mondiale. Tre generazioni di Bertoli hanno coltivato per anni secondo la tradizione, e i prodotti sono gustosi e ricchi di sapore, con un'ottima digeribilità e alti parametri proteici. I cereali che li compongono garantiscono un livello ottimale (basso) di glutine. È una pasta ideale per i bambini perché è sana e naturale, e per le diete degli atleti perché è leggera e nutriente.

Il riso Maremma è di altissima qualità; una qualità dovuta non solo alle favorevoli condizioni climatiche naturali della pianura di Grosseto, ma anche al fatto che il terreno su cui cresce il riso stesso è stato dedicato solo di recente a questa coltivazione e quindi non è ancora impoverito dalle ripetute monoculture viste in altre parti d'Italia.
