The winery Rocca di Frassinello, is located in the high Maremma, near Gavorrano, and was designed by the famous architect Renzo Piano. The project is super ambitious and sees the collaboration of two world-famous wineries in this project: Castellare di Castellina and Lafite, the famous French chateau. The Maremma, in addition to being excellent for the local and Tuscan Sangiovese, is suitable for international vines such as Merlot and Cabernet.

"Quando assaggi il loro riso, puoi percepire i sapori della Maremma. Tenuta San Carlo è un luogo unico, una fattoria fuori dal comune. Situata nella pianura del fiume Ombrone, all'interno del Parco della Maremma, Tenuta San Carlo è immersa in uno dei paesaggi più naturali e incontaminati della Toscana. Per produrre riso di alta qualità, ascoltano la terra e rispettano la natura, senza volerla dominare. Dalla preparazione del terreno, alla selezione del seme fino ai tempi della raccolta, seguono un'etica di sostenibilità e prestano particolare attenzione ai dettagli in ogni fase del processo. "Dalla nostra terra alla tua tavola" è lo slogan di Tenuta San Carlo, parlando del suo riso. Tutto il riso è coltivato naturalmente e lavorato a pietra per garantire la massima qualità. Nell'ottobre 2015, Tenuta San Carlo ha intrapreso il percorso di transizione pluriennale verso la produzione biologica certificata. Infatti, vengono seguiti standard ecologici molto rigorosi nella produzione di riso e non vengono utilizzati erbicidi, pesticidi o fungicidi. Per migliorare la qualità e la fertilità del suolo, utilizzano tecniche come la copertura vegetale e la rotazione delle colture. Vengono prodotti solo due tipi di riso: Riso Carnaroli e Ribe."
Ha un intenso colore rosso rubino e un bouquet elegante e persistente; al palato è secco e bilanciato con molta struttura. La Riserva offre una reale concentrazione e profondità di carattere.
Chianti Classico Riserva DOCG Campocorto
Le uve vengono diraspate e fermentate tutte insieme. La fermentazione del mosto avviene in vasche di cemento per 2-3 settimane. Il mosto viene poi trasferito in vasche di acciaio per completare la fermentazione malolattica. Dopo un paio di mesi, quando il mosto è stato chiarificato e decantato, metà viene trasferita in vasche di acciaio, mentre l'altra metà matura per 12 mesi in botti di rovere di secondo passaggio.

La Selva Organic Farm:
LaSelva entered the world of Italian organic farming in 1980 in southern Tuscany, in Albinia – Orbetello (GR), a place that is still the heart of all its activities today. Today, on over 600 hectares of agricultural land and in compliance with all European Union regulations on organic farming, it grows vegetables, fruit, cereals and grapes for wine production. It also produces its own animal feed, from which it also obtains the fertiliser that nourishes the soil, thus creating a closed-cycle agricultural system.

L'aceto in Italia non è fatto solo a Modena. La famiglia Natali ha voluto sfatare questo mito iniziando a produrre aceto di qualità in Toscana. Con l'arrivo della nuova generazione in azienda e l'idea di sfruttare le conoscenze delle fermentazioni naturali che erano sempre state utilizzate in casa per il vino, la produzione si è orientata verso l'aceto. Un'intuizione vincente che in pochi anni ha portato questa azienda a diventare la più importante della regione, con il marchio Acetoscana. Le uve Sangiovese vengono raccolte nelle colline del Chianti. La vinificazione e la fermentazione, che sono essenziali per ottenere un aceto di qualità, sono costantemente controllate e gestite in modo naturale. La parte chiave del processo è una lenta fermentazione acetica a temperatura costante che richiede lunghi periodi di tempo e controlli continui, effettuati utilizzando un metodo statico superficiale, che ricorda il metodo antico di Orleans.

Il Chianti Classico Castello di Monsanto è sicuramente tra i migliori vini Chianti che si possano trovare. Prodotto dalle vigne più giovani della tenuta, il Chianti Classico Annata combina la prontezza e la leggerezza del sorso con la profondità che i terreni di Monsanto conferiscono ai suoi vini.
Castello di Monsanto
Ci sono due luoghi al Castello di Monsanto che catturano ogni visitatore per il fascino e la magia che si percepiscono: la collina del Poggio e la storica cantina. Trasmettere almeno un decimo delle emozioni che si provano visitando la cantina di Monsanto è molto difficile. Gli aromi, gli echi, i silenzi, gli strati di nobili muffe rendono questo un luogo unico che merita almeno una visita. L'azienda ha origine da qui. Così, da una salita sul Poggio e da una discesa nella cantina, è nata per la prima volta l'idea di realizzare un Cru nel Chianti Classico. Era il 1962 quando furono prodotte le prime 6.000 bottiglie del Chianti Classico Riserva Il Poggio. Dei 72 ettari piantati a vigneto, tra 260 e 310 metri s.l.m., 56 ha sono in Sangiovese, il vitigno in cui l'azienda ha profondamente creduto fin dall'inizio. I cloni di Sangiovese presenti nei vigneti provengono da una selezione massale di viti trovate nel vigneto Il Poggio, "la madre" di tutti i vigneti di Monsanto. In una piccola percentuale sono poi presenti i due vitigni storici del Chianti Classico: Canaiolo e Colorino.

When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. Storia del Pastificio Caponi:
Pastificio Caponi è un'azienda storica di pasta a Montepulciano, in Toscana. Fondata nel 1953 da Nonna Angelina, l'azienda è ora gestita dalla terza generazione della famiglia Caponi, che continua a produrre pasta artigianale di altissima qualità utilizzando solo grano italiano di prima scelta e acqua di sorgente.
L'azienda si distingue per la sua attenzione alla tradizione e alla qualità, utilizzando solo metodi artigianali per lavorare la pasta. Infatti, i macchinari utilizzati sono quelli di un tempo, che permettono di ottenere una pasta dal sapore e dalla consistenza unici, grazie a una lavorazione lenta e accurata.

The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel. The products are rich in omega 3 and protein, and the processing and preservation contribute to maintaining the flavour without altering it.
