Villa Sant'Anna is an Italian winery located in Montepulciano, Tuscany. Founded in 1971 by Giuseppe and Silvana Bianchini, the winery has a history that goes back long before its creation.Over the years, the estate passed from hand to hand, until it was bought by the Bianchini family in 1971. Giuseppe and Silvana Bianchini decided to dedicate themselves to grape growing and wine production, with the aim of creating high quality wines that were an authentic expression of the Tuscan terroir.Their focus on quality and environmental sustainability led them to adopt organic farming methods and to limit the use of chemicals. Thanks to this approach, Villa Sant'Anna was one of the first wineries in Tuscany to obtain organic certification.

That of Poggio Nibbiale is a special story, which begins far away, in Germany... The Buchheim family had always dreamed of having a vineyard in Tuscany. Their wish came true when the Poggio Nibbiale winery was founded in 1998. Their dream of cultivating wine in the beautiful scenery of southern Tuscany became reality. The vineyards of Poggio Nibbiale are located in the hills of Maremma between Scansano and Magliano, 300 metres above the Tyrrhenian Sea, with a magnificent view of Giglio Island, Elba, Montecristo and the Monte Argentario peninsula.
Vermentino Poggio Nibbiale, Vinification:
Selective harvesting by hand, destemming, pressing with a pneumatic press and subsequent fermentation in temperature-controlled stainless steel tanks. After a period of bâtonnage, this wine matures in stainless steel tanks until bottling. In the case of the Vermentino grape variety, decantation and in particular the natural activity of the grape's own enzymes are of great importance. The grape variety is very demanding.
Ombra Blu Sassotondo, Tasting notes:
Ruby in colour, very consistent. The nose reveals notes of small red fruits, cedar and black pepper. The taste is concentrated and soft, very long but not heavy. *
The grapes are harvested and selected by hand and vinified separately. Fermentation takes place without the addition of yeast and lasts, including maceration, between 25 and 30 days. The wines mature for 12 months partly in barriques and partly in steel. Subsequently blended and bottled, the wine is aged for a minimum of 6 months in the bottle.

Antonio Camillo’s wine cellar is located not far from Capalbio with vineyards extending over about nine hectares. They are mainly composed of old vines, between 40 and 50 years old. The varieties cultivated are obviously Ciliegiolo, with a small percentage destined for Vermentino and Sangiovese. Traditional working methods are followed between the rows, favouring manual operations and limiting interventions for health defence, using exclusively natural products such as copper and sulphur. Even in the cellar, the working method is oriented towards accompanying the wine in its natural course, trying to intervene as little as possible, without forcing the result of the harvest in any way. The wines that are signed each year by Antonio Camillo are recognisable by their elegant style, in which the balance of aromas and flavours is the ultimate goal.

La cantina Val Del Melo si trova vicino al comune di Castiglione della Pescaia, la sua vicinanza al mare combinata con la sua posizione in fondo alla valle significa che Pian di Rocca è caratterizzata da un microclima particolarmente temperato, 2-3 gradi più alto della media locale. Non è un caso che per anni l'area sia stata il sito di produzione dei primi frutti e ortaggi della Maremma. Dal 2019, l'azienda utilizza agricoltura biologica certificata, che garantisce prodotti genuini di ottima qualità.
In Attesa DOC, Vinificazione:
All'arrivo in cantina, le uve vengono diraspate e lasciate quasi intatte. La fermentazione alcolica avviene in serbatoi di acciaio a una temperatura di 27 °C e la macerazione dura circa 25/30 giorni, seguita dalla fermentazione malolattica. Dopo alcuni mesi, il vino viene filtrato e imbottigliato.
Fagiolo Nero Podere Pereto, Come usare:
Il ceci nero è caratterizzato dal suo distintivo colore scuro, dal sapore intenso e dalla consistenza cremosa. La buccia è più spessa rispetto ad altre varietà e rende il ceci nero più adatto per preparazioni con verdure schiacciate o frullate.

L'azienda è stata fondata nel 1991, a Serre di Rapolano, nel cuore della Toscana.
L'obiettivo è praticare l'agricoltura biologica, creando un microcosmo che sia sostenibile sia ecologicamente che economicamente e socialmente. Fin dall'inizio, infatti, vengono coltivate varietà locali e antiche, escludendo l'uso di fertilizzanti, pesticidi chimici e sintetici, il fagiolo toscanello e il fagiolo zolfino, e cereali come il Verna, il Gentil Rosso, il Frassineto e il grano duro Cappelli, che sono naturalmente adattati al suolo e al clima locali. Inoltre, consente all'azienda agricola di adottare un sistema di rotazione triennale e prevenire l'eccessivo sfruttamento della terra, garantendo così il rispetto dell'equilibrio del terreno.

Vibrant amber colour. The nose is bursting with dried fruit, honey, caramel and candied fruit. On the palate it is broad and enveloping, leaving a sensation of chestnut flour and a long, pleasant finish.
Neither too dry nor too sweet. Produced in strict accordance with tradition, but with Malvasia Bianca and a small amount of Trebbiano grapes dried out in an aired area and not on “cannicci” (special wicker surfaces). And then in half-barriques with 20 to 30 year old deposits (“madri”). There’s never enough.

The history of La Bottega di Adò:
La Bottega di Adò was founded in 1992. It is a state-of-the-art workshop specially built in Montignoso in the heart of the Apuan Alps. It is perfectly equipped in terms of technology and structure and ensures production at a national level in accordance with current EEC standards. But while the mind is modern and rational, the heart remains that of the great-grandfather, and the aromatics are still crushed in a marble mortar to capture the true flavors of the past. La Selva Organic Farm:
LaSelva entered the world of Italian organic farming in 1980 in southern Tuscany, in Albinia – Orbetello (GR), a place that is still the heart of all its activities today. Today, on over 600 hectares of agricultural land and in compliance with all European Union regulations on organic farming, it grows vegetables, fruit, cereals and grapes for wine production. Mieleria Rossi Novaro:
Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. In keeping with its commitment to the environment, “La Mieleria Rossi Novaro” is self-sufficient in the production of the electricity used in its workshop.

La Corneta:
Rooted in Tuscany, in the heart of the prestigious Chianti Colli Aretini terroir, La Corneta bears the mark of time and the seasons. The wines are produced from 8 hectares of organically cultivated vineyards, where historic grape varieties coexist with rarer ones: Sangiovese, Pinot Noir, Syrah, Chardonnay, Sauvignon Blanc and Incrocio Manzoni. This diversity, combined with living soils and controlled yields, provides health and expressive raw materials. The approach is then based on rigorous vinification and careful selection of the containers for ageing: temperature-controlled stainless steel tanks, barriques and tonneaux of different sizes and vintages, terracotta and cocciopesto amphorae are tools that are used with precision. This meticulous, contemporary and demanding method is part of a constant search for balance, structure and natural complexity, without standardising taste.

Deep ruby red in colour. Consistent and fairly candied fruit aromas, hints of sweetness. The wine flows creamy, elegant and very long finish. Rich flowers and lightly dominate gracefully over the dense alcohol. The acidity enlivens it in a sumptuous and very long finish.
Cantina La Cura
The Cantina La Cura, owned by Enrico Corsi, is a young and dynamic production company consisting of fifteen hectares of vineyards in the heart of the denomination Maremma Toscana Doc and Monteregio di Massa Marittima, located in the high Maremma Toscana on the Tyrrhenian coast. The main varieties hosted are Sangiovese, Cabernet Sauvignon, Merlot, and Aleatico for a total annual production of 30 thousand bottles. The company favors an ecological approach to the processing of soil and vines, coordinated by the University of Pisa, which is also its main technical partner. The first bottles of wine date back to 1999.
Passito wine from Maremma
Only 1300 bottles produced each year. In the part of the Maremma known as the Colline Metallifere, Enrico Corsi and his Cantina La Cura produce exceptional, handcrafted wines. For the Passito Predicatore, Merlot grapes are used and in addition to the manual harvest in the vineyard, a second skimming is carried out in the cellar, to guarantee only the best for this wine. We recommend pairing it with dark chocolate or chocolate cantucci to enhance the flavours. Also excellent as a meditation wine.
Vin Santo Di Carmignano DOC Riserva Capezzana, Tasting notes:
It shows an intense golden yellow color. the scent is very complex, fruity, with hints of dried and candied fruit, apricot and orange peel; floral notes are also present. The palate is complex, sweet, smooth and with a fruity and persistent aftertaste.

Il Caseificio Fiorino si trova in un luogo di straordinario fascino e valore storico, il borgo medievale di Roccalbegna, alle pendici del Monte Amiata. Il latte utilizzato per produrre i nostri formaggi proviene esclusivamente da aziende agricole locali selezionate nei comuni limitrofi: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico e Grosseto. Dopo un'analisi interna, viene effettuata una selezione basata sulle caratteristiche del latte e sul tipo di formaggio da realizzare. L'obiettivo è raggiungere la massima qualità indipendentemente dal rendimento. Ogni fase di lavorazione è eseguita a mano da esperti casari.
