The Valdarna black cockerel is a typical Tuscan breed of ancient origin that, were it not for Carlo Giusti's ambitious project, would have become extinct by now.

Pigeon roe is processed by hand from the extremely cured pigeon ham. The name is reminiscent of the traditional fish botargo because, by grating the ham, particular curls are obtained.
It has a pungent odour but gives the palate a fine and elegant flavour, persistent and pleasant. Strong flavours and savouriness reminiscent of the flavours and scents of the woods where pigeons are reared in total freedom in Pisa. It is a special experience that cannot be found elsewhere.
