Silio Ciliegiolo IGT Tenuta Montauto, Tasting notes:
A deep perfume, which initially recalls chocolate and then turns towards helichrysum and red fruits. Little by little it thickens with sensations of aromatic berries, such as myrtle, also in leaf, cassis and licorice root and cardamom.

At the Tenuta Montauto they are definitely lucky. There is nothing around them: only the silence as far as the eye can see of the thick Maremma woods, the wind, the hares and the hawks. There are no factories, no towns, no neighbours, no roads except the provincial road to Campigliola. An isolation that allows them to make uncompromising choices, in total freedom and with an absoluteness that comes from being released from the world. Besides isolation, they also have the good fortune of the providential sea air that always blows in from the west. The sea cannot be seen, but it can be felt in the wind that blows from Capalbio, which is only 10 km away as the crow flies. A wind that dries the vines and heals them from humidity.
Enos I Tenuta Montauto, Tasting notes:
Straw yellow with light greenish reflections. The nose opens naturally and elegantly on aromas of exotic fruit (passion fruit) with mineral traces of flint. In the mouth it is fresh and sharp, leaving velvety and aromatic notes, with a savoury, harmonious and persistent finish.
Enos I Vinification:
The grapes, before being pressed, are placed overnight in the refrigerator in order to have a greater extraction of aromas and to avoid oxidation. The whole bunch is then softly pressed. This is followed by decanting for 36 hours and fermentation in stainless steel at a controlled temperature of 16°C. All energy used during the production process comes from renewable sources.

Bianco di Pitigliano DOC Weinbereitung:Vor dem Pressen werden die Trauben über Nacht in einem Kühlraum gelagert, um eine bessere Aromaextraktion zu erzielen und Oxidation zu vermeiden. Anschließend erfolgt eine sanfte Pressung. Die Trauben werden dann 36-48 Stunden lang dekantiert. Die Gärung erfolgt ohne Hautkontakt in Edelstahltanks bei einer kontrollierten Temperatur von 16 °C. Veganer Wein. Die gesamte während des Produktionsprozesses verbrauchte Energie stammt aus erneuerbaren Quellen.
Tenuta MontautoAuf der Tenuta Montauto hat man definitiv Glück. Um sie herum gibt es nichts: nur die Stille, soweit das Auge reicht, die dichten Wälder der Maremma, den Wind, die Hasen und die Falken. Es gibt keine Fabriken, keine Städte, keine Nachbarn, keine Straßen außer der Provinzstraße nach Campigliola. Eine Isolation, die es ihnen ermöglicht, kompromisslose Entscheidungen zu treffen, in völliger Freiheit und mit einer Absolutheit, die daraus resultiert, dass sie von der Welt befreit sind. Neben der Isolation haben sie auch das Glück, dass immer eine wohltuende Meeresbrise aus Westen weht. Das Meer ist nicht zu sehen, aber man spürt es in dem Wind, der aus Capalbio weht, das nur 10 km Luftlinie entfernt ist. Ein Wind, der die Reben trocknet und sie von Feuchtigkeit befreit.
